After a thorough Residential and Hospitality Services study assisted by The Hysen Group, the decision was made to relocate the MSU Bakery to the MSU Food Stores facility through a combination of new construction and renovation of existing space. Groundbreaking was in October of 2005 for this project. This move reduced expenses, while improving efficiency, especially delivery services. The new operation also has a new name, The MSU Bakers, and is well positioned to respond to quickly changing customer needs, both on and off campus. The move took place in the Fall of 2006 and the bakery was fully operational early 2007. The move maximized efficiency, resulted in a more productive operation and improved flexibility to meet the needs of the campus and local community. A key change are the hours of production and the enhancement of a retail focus. Customers today want and expect “just baked” freshness along with a wide variety. In addition, The MSU Bakers has a strong tradition of providing custom decorated cakes for all occasions and will look to enhance that area of their business. |

January 9 FINAL UPDATE! |
![]() The move is finally over, and all equipment has been moved from Brody to the new bakery facility in the Food Stores building. Office spaces have been beautifully furnished (top photo), the cake decorating room has been outfitted with all its supplies (photo, below left), and the large center baking room is filled with all manner of ovens, mixers and other bakery equipment (photo, below right). Operations have begun, and next week our students will return to their bakery favorites once again being served in the cafeterias. Bakery employees love their new space, especially the windows, which they didn’t have at Brody. The baking process is working well, with operational flow going logically from one station to the next, and finally out the Bakery door to await delivery by Food Stores. Stop by and visit – there’s usually a cookie to be had. |

October 30 |
![]() A little bit more equipment has been brought in and installed in the bakery, including a large proofer. Several hand-washing stations have also been installed. The office area is now wired and ready for floor covering and office furniture. Outside, the north and west entrances have been completed, and the Grounds Department has done landscaping around the entire addition. Trees and shrubs have been planted and mulch has been spread (left photo). Finally, the dock area has been completed with the black vinyl that attaches to trucks, keeping wind and weather out, while trucks are loaded and unloaded (right photo). Next update will be in late November, after the ribbon-cutting ceremony on the 20th. By that time, office equipment and furniture is expected to be delivered and installed. Then, in early December, the big move from Brody will bring all the remaining equipment for the Bakery. |

| October 9 | ![]() Equipment continues to be installed in the main section of the bakery (above left). In the cake decorating room, stainless steel countertops and baking racks are now in place. On the west side of the new addition, electrical and ethernet wiring is being installed in the new office area. |

| September 25 | Not much will change with the bakery addition over the next couple of weeks. They are now awaiting delivery of machinery and other furnishings. We'll have new photos again at the end of October. | ||
| September 18 | ![]() Several large utility bridges are now suspended from the ceiling in both the large center baking room and the cake decorating room. As discussed previously, these will allow for many smaller pieces of equipment to be moved to them, attached and used. Then when work is completed, the machine will be disconnected from the bridge and pushed back against a nearby wall, allowing better use of space and ease of cleaning. A few large pieces of equipment are now in place, including the dish machine and one of the two Fish ovens (brand name), and several smaller pieces, including a mixer, have been delivered. All exterior fencing has been removed, and the temporary wall separating the existing Food Stores building from the new addition has also been taken down. Machine installation is scheduled for completion in early November. ![]() |

| September 11 | ![]() The big change this week has been the finishing of the concrete floors. They were smoothed and polished, which has made a big difference in their appearance. As previously stated, this type of floor was chosen for its ease of maintenance. In the photo, you can see the new cooler door recently installed. The west entrance has the interior door now completed, and the north entrance exterior is nearly finished as well. ![]() |

| August 28 | ![]() Interior painting continued in the main room, the dish room and the cake decorating room, and a cooler was installed (pictured right). Green exterior trim was attached on the sides of the roof, which matches existing trim. Sidewalks were poured over the heater hoses we saw last week, and painting on the exterior concrete was completed. Soon, the concrete floors inside will be polished - this will be a really attractive floor, as well as being very durable and low maintenance. |

| August 21 | ![]() The rest of the concrete has been poured in the main room of the new Bakery, and doors have been placed on the Cake Decorating Room. Ductwork is being done near the large stainless steel hood, where the steam pots will go. A large pit exists where the pot and pan machine will eventually be placed. Outside, the concrete is being stained (after several tries to match the brick), and the entrance to the office area on the west side is nearly complete. Concrete is still being poured, some being equipped with snowmelt tubing, which will keep the walks ice-free during the colder months. ![]() |

| August 14 | ![]() Different colors of concrete are being poured in raised pads in various areas of the addition. It will be interesting to see how these all look when the room is completed. On the far end of the room, near the large stainless steel hood, equipment will be stored against the wall, but pulled out when needed and connected to electrical and air pressure outlets in the center of the area. This new space-saving concept allows plenty of room around any piece of equipment being used, but when not needed, the equipment can be lined up against the wall, where surrounding space is unnecessary. |

| August 7 | ![]() Painting is continuing, with walls now completed, and window and door frames being painted a light green. The women's locker room is nearly complete, with tile floors, high-quality vinyl lockers (no rust ever!), a changing area, beautiful solid surface countertops and a shower - a remarkable improvement on the old facility. Garage doors have been installed in the dock area, and forms are being placed on the floor in the work area for further concrete work. A large hood has also been installed. |

July 24 |
Painting is continuing throughout the new addition. The new, spacious women's locker room is being fitted with Corian countertops, a huge improvement over the existing women's locker room. When Food Stores opened in 1964, there were no women employees, so there was no need for a designated locker room. Now, women make up half the workforce at Food Stores, so the new facility is badly needed. The new cooler has been completed and is now in the process of being cooled to the same temperature as the other adjacent coolers, -5 degrees. Currently the new cooler is at approximately 27 degrees. Each day, the temperature is dropped five degrees to allow for the moisture in the concrete to dissipate, avoiding cracking, and also allowing other building materials to adjust to the lower temperature gradually. Next week, heater coils will be installed on the sidewalk in front of the building, preventing ice and snow buildup in the winter. This is one of many accessibility accommodations incorporated into the new Bakery addition. |

| July 13 | ![]() Tilework has been completed in several areas, including bathrooms. Painting has also begun in the main area of the bakery addition. As you see here, they are now working on the ceiling, spray painting everything white. Outside, the concrete has been completed for the front ramp and sidewalks. |

| June 19 | Much progress has been made on the inside of the building. Electrical wiring has been run in the ceiling, and HVAC systems are also in progress. Rooms have been roughed in with concrete block, and most window and door frames are in place. One of the new features of the Bakery addition is an indoor dock, which you can see in the photographs. They were pouring the concrete today. This will allow vendors who need to deliver at odd hours to have access to a protected place to leave their goods, without necessitating access to the rest of the building. Also, the large new Food Stores freezer will allow the Bakery to make certain items ahead and store them, so Food Stores can sell and deliver them at the appropriate times. ![]() |
